Curry Comfort in a Bowl

Did someone say curry? If you are yearning for a trip to the islands, this comfort bowl is the next best thing. Try out this curry comfort in a bowl recipe and let me know your thoughts!

Ingredients
2 cans of butter beans
1 can green peas
3 potatoes
3 boniato sweet potatoes
1 onion
1 green pepper
1/2 tsp allspice
1/2 tsp. Diced garlic
1/4 cup of powdered coconut milk
3 packs Goya Vegetable Seasoning
Scotch Pepper
Tsp. Parsely
Instructions
Boil peeled and cut potatoes (white and sweat) until cooked.
Add avocado oil to a frying pan.
Add cut whole onion, half a sweet pepper, 1/4 cups of water and coconut milk, and whole (uncut) scotch pepper to pan.
Stir until cooked.
Add butter and green beans to pan.
Add 3 packets of Goya vegetable seasoning
Add diced sweet potatoes to pan
Stir lightly, leave to marinate for 5 – 10 minutes.
Add parsley
Serve with a side of rice or any side of your liking. Enjoy!
