Coconut Curried Chick Pea Rice

This dish tastes as good as it looks. I was sad when it was all gone. It is definitely on my top five list of vegetarian dishes that I love. It is also very quick and easy to prepare.

2 cups of cooked rice
1 can of chick peas
2 packets of vegetable seasoning
1/2 a red and green bell pepper
1 tsp. curry
1/2 cup of coconut milk

Add 1 tsp of coconut oil into frying pan.
Add tsp of curry to oil.
Once the curry is light brown, add chickpeas, bell peppers (chopped), and onions to the pan.
Add cooked rice to pot and stir until golden.
Add coconut milk and goya seasoning.
Stir and then leave covered for 5 – 10 minutes
Serve with your choice of side.
